食料品店への地理的アクセスと、住民が認識する食環境の双方に着目し、大規模縦断データを用いて分析してきました。食環境が認知症、死亡、要介護状態と関連する可能性を示すとともに、客観的指標と主観的評価の乖離にも注目しています(Tani et al., 2018;2019;Momosaki et al., 2019;Yamaguchi et al., 2019)。

食を支える環境は、都市構造や施設配置によって大きく規定されます。徒歩圏での食品入手を支える施設配置に加え、動線や視認性、安全性などを含めた空間設計は、健康を考慮した都市・空間デザインの重要な要素となります。
Overview
This area examines how food environments—such as access to grocery stores and perceived ease of food acquisition—relate to health. We conceptualize food environments as contextual conditions that shape dietary behavior and health risks beyond individual choice.

Using large-scale longitudinal data, we have analyzed food environments by combining objective measures of store access with residents’ perceived evaluations. Findings suggest that neighborhood food environments may be associated with dementia incidence, mortality, and the onset of functional disability, and also highlight discrepancies between objective and perceived access (Tani et al., 2018; 2019; Momosaki et al., 2019; Yamaguchi et al., 2019).
Perspective for Urban / Spatial Design
Food environments are strongly shaped by urban structure and facility distribution. In addition to ensuring walkable access to food stores, spatial design that considers circulation, visibility, and safety can be an important element of health-oriented urban and spatial design.
